A bit of a headache and a liver in pain? I’m not here to judge, but to continue our traditional New Year’s Eve after-party menu and offer you a recipe that will delight your taste buds, of course, but also your liver that will have given everything this holiday season.
Today’s recipe will be a red cabbage salad to serve as a starter, with a so sweet, subtle, and delicate vinaigrette that will delight all the red cabbage recalcitrants, even the most stubborn. Yes, I decided to start this year with modesty.
So no more speeches; here we go for five minutes of preparation, simple and effective.
After New Year’s Eve red cabbage salad.
For 4 servings
1/4 organic red cabbage
8 walnuts
4 tsp cider vinegar
6 tsp orange juice, or the juice of half an orange
3 tbsp walnut oil
1/2 tsp mustard
1 tsp honey
Salt
Madagascar pepper
Recipe
Wash the quarter of red cabbage in clean water and dry it carefully with a clean tea towel. Using a cutting board and a sharp, wide, thin knife (such as a chef’s knife), make skinny slices going from one tip to the other of the piece of cabbage. Set aside.
Shell the walnuts and chop them coarsely.
In a bowl, pour all the ingredients, namely the juice of half an orange, the cider vinegar, the walnut oil, the honey, the mustard, the salt, and the pepper, and mix well with a fork or a small whisk. Set aside.
Presentation
Place a handful of cabbage in your prettiest little bowls or soup plates, then pour two tablespoons of vinaigrette sauce. Finish with a shower of walnut pieces.
A great starter to get your overworked digestive system back in place, this red cabbage salad will go very well with kombucha or high-quality, low-mineral water to hydrate your body without overloading the kidneys. For those who have remained reasonable, you can also go for a red with character, such as Côtes du Rhône, but shh, you don’t get it from me.
